Purdue launches institute to help farmers innovate products

Purdue University has launched the Institute for Food Product Innovation and Commercialization to help farmers develop innovative food and beverage products.

Funded by a $1.5 million USDA grant, the institute aims to empower farmer-entrepreneurs by providing training, technical support, and business development resources.

Led by Dharmendra Mishra, the institute assists farmers in adding value to their commodities.

Whether it’s dairy farmers producing ice cream or growers marketing salsa, the program helps participants overcome challenges like recipe development, food safety compliance, and market evaluation.

The institute combines expertise from Purdue’s Food Science and Agricultural Economics departments. This collaboration brings together food manufacturing, safety knowledge, and business management to guide farmers through product commercialization.

Key facilities, such as the Skidmore Food Product Development Laboratory and the Pilot Plant, provide hands-on resources. Farmers can test recipes and simulate commercial production processes, ensuring their products are ready for large-scale manufacturing.

The program includes three phases. Phase 1 offers six online courses covering food design, safety, and business basics. In Phase 2, participants attend a one-day on-campus workshop exploring the food product life cycle. Finally, Phase 3 provides personalized feedback and assessments to refine their ideas.

Supported by organizations like Indiana Farm Bureau and Indiana Grown, the institute also involves Purdue students in real-world projects, benefiting both education and local communities.

According to Kenneth Foster, assistant director, the institute aims to keep more value within local communities by reducing reliance on national supply chains. “This initiative helps farmers innovate and create economic impact locally,” he said.

Purdue’s initiative not only boosts regional economic growth but also empowers farmers to develop products that enhance their profitability and sustainability. Through collaboration, innovation, and education, it sets a strong foundation for agricultural entrepreneurship.
